Slow Cooker Osso Buco (Easy Winter Comfort Recipe)
Looking for an easy, hearty meal that delivers big on flavour? This slow cooker Osso Buco is the perfect winter dish. With tender beef, rich sauce, and simple prep, it’s a set-and-forget recipe that the whole family will love.
🛒 Ingredients
- 1kg Osso Buco
- Lane’s Prime Seasoning
- 1 leek
- 2 sticks celery
- 4 carrots
- A few sprigs thyme
- A few sprigs rosemary
- 4 bay leaves
- 4 cloves
- 2 tbsp plain flour
- 400g tin tomatoes
- 1 cup red wine
- 1L beef stock
- 2 tbsp oil
- 1kg potatoes (for mash)
🔥 Method
1. Season & Sear
Season the Osso Buco generously with Lane’s Prime Seasoning.
Heat oil in a large pan over medium-high heat and sear the meat until browned on all sides. Set aside.
2. Prep the Vegetables
Peel and chop carrots, leek, and celery into roughly 2cm chunks.
3. Build the Base
In the same pan over medium heat, add a little extra oil if needed.
Cook the vegetables with thyme and rosemary for about 5 minutes, stirring until softened.
4. Add Flour & Spices
Stir in the flour and cloves, mixing well to coat the vegetables.
5. Transfer to Slow Cooker
Place the vegetable mix into your slow cooker.
Add tomatoes, bay leaves, red wine, and beef stock. Stir to combine.
6. Slow Cook
Add the seared Osso Buco into the slow cooker.
Cook:
- Low: 8 hours (recommended)
- High: 4–5 hours
The meat should be tender and falling off the bone.

Serve with creamy mashed potatoes to soak up that rich, hearty sauce.
