Ingredients

Serves 4

  • 4 beef cheeks, trimmed
  • 2 tbsp plain flour
  • 60ml olive oil
  • 2 brown onions, roughly chopped
  • 100g shortcut bacon, diced
  • 4 garlic cloves, crushed
  • 750ml red wine
  • 450ml beef stock
  • 2 tbsp tomato paste
  • 400g small button mushrooms
  • Salt and pepper, to season
  • 1 tbsp flat-leaf parsley, chopped

Method

1. Prepare the Beef

Preheat your oven to 170°C.

Lightly coat the beef cheeks in flour. Heat half the olive oil in a heavy-based casserole dish over medium-high heat and brown the beef cheeks for 3-4 minutes on each side. Remove and set aside.

2. Build the Flavour Base

Reduce the heat to medium and add the remaining olive oil. Add the onions and bacon, cooking for around 5 minutes until softened and lightly golden.

Stir through the crushed garlic and cook for a further minute until fragrant.

3. Create the Braising Liquid

Return the beef cheeks and any resting juices to the casserole dish. Pour in the red wine and bring to the boil.

Add the beef stock and tomato paste, stirring well to combine. Bring back to a gentle boil, then remove from the heat and cover with a lid.

4. Slow Cook to Perfection

Transfer the casserole dish to the oven and cook for approximately 3½ hours, or until the beef cheeks are fork-tender and easily pull apart.

5. Finish the Dish

Add the button mushrooms, cover again, and return to the oven for a further 20 minutes.

At the same time, roast your truss cherry tomatoes until softened and slightly caramelised.

Season the braise with salt and pepper to taste and finish with a sprinkle of fresh parsley.
