This Grilled Greek-Style Lamb Salad combines tender chargrilled lamb with a vibrant Mediterranean-inspired salad packed with fresh vegetables, chickpeas, feta and olives. It's a nutritious, protein-rich meal that's perfect for summer entertaining, weekend barbecues, or a healthy family dinner.

Ingredients

For the Lamb

For the Salad

  • 2 small zucchini, peeled into ribbons
  • 80g baby spinach leaves
  • 200g baby tomatoes, halved
  • 400g can chickpeas, rinsed and drained
  • 100g red capsicum strips in brine, drained
  • ¼ cup pitted Kalamata olives, halved
  • 120g feta cheese, crumbled
  • Extra oregano leaves, to serve

To Serve

  • Lemon wedges
  • Pita bread

Method

Step 1: Marinate the Lamb

Heat a large chargrill pan or barbecue over medium-high heat.

Place the butterflied leg of lamb on a tray. Drizzle with 1 tbsp olive oil and rub well to evenly coat the lamb.

Sprinkle over Lane's Souvlaki Recipe Base, ensuring all sides are generously covered. Massage the seasoning into the meat.

Allow the lamb to marinate for at least 15 minutes, or refrigerate for up to 4 hours for a deeper flavour.

    Step 2: Cook the Lamb

    Cook the lamb on the chargrill for 3 to 4 minutes on each side until nicely browned.

    Reduce the heat to medium-low and continue cooking for a further 8 to 10 minutes per side, or until cooked to your preferred level of doneness.

    Transfer the lamb to a tray, loosely cover with foil, and allow it to rest for 10 minutes.

    Step 3: Prepare the Salad

    In a large serving bowl, combine:

    • Zucchini ribbons
    • Baby spinach
    • Tomatoes
    • Chickpeas
    • Capsicum
    • Kalamata olives
    • Feta cheese
    • Extra oregano

    Drizzle with the remaining olive oil and red wine vinegar. Season to taste and toss gently to combine.

    Step 4: Serve

    Slice the rested lamb and serve alongside the Greek salad. Add fresh lemon wedges and warm pita bread for a complete Mediterranean-inspired meal.
