Ingredients
- 4 x My Meat Online Chicken Schnitzels
- 4 eggs
- 2 slices sourdough bread
- Olive oil spray
- Salt & pepper, to season
- 6 slices rindless bacon
- 4 baby cos lettuces
- 80g shaved parmesan cheese
- 1 cup Gold Gourmet Foods Caesar Dressing
- 2-3 tablespoons vegetable or canola oil, for shallow frying
Method
1. Make the Croutons
Preheat your oven to 200°C.
Tear the sourdough into bite-sized pieces and spread onto a baking tray. Lightly spray with olive oil and season with salt and pepper. Bake for 10-12 minutes, turning halfway through, until crisp and golden. Set aside to cool.
2. Boil the Eggs
Place the eggs in a saucepan and cover with cold water. Bring to the boil, then cook for 8-10 minutes. Drain and transfer to a bowl of cold water to cool. Peel and cut in half.
3. Cook the Bacon
Finely dice the bacon and cook in a frying pan over medium heat for 5-7 minutes, or until crispy. Transfer to a paper towel-lined plate to drain.
4. Shallow Fry the Chicken Schnitzels
Heat 2-3 tablespoons of vegetable or canola oil in a large frying pan over medium heat.
Carefully place the chicken schnitzels into the pan and cook for 4-5 minutes per side, or until golden brown, crispy, and cooked through. Avoid overcrowding the pan and cook in batches if necessary.
Transfer the schnitzels to a paper towel-lined plate and allow them to rest for 2-3 minutes before slicing into strips.
5. Assemble the Salad
Wash and separate the baby cos lettuce leaves and arrange them across four serving bowls or plates.
In a large mixing bowl, combine the croutons, crispy bacon, and shaved parmesan. Add the Gold Gourmet Foods Caesar Dressing and gently toss until evenly coated.
Divide the mixture between the lettuce bowls.
Top with sliced chicken schnitzel and halved boiled eggs.
6. Serve
Finish with extra shaved parmesan, cracked black pepper, and an extra drizzle of Caesar dressing if desired.
